Liver With Rosemary

Ingredients:

  • 1 large onion sliced
  • 3 sprigs of fresh rosemary
  • 2-3 tbsp of flour
  • 1 tbsp tomato paste in 1/2 cup of water
  • some olive oil to fry off liver
  • salt and pepper to taste

Directions:

  1. Slice onion and saute in some olive oil until tender
  2. Slice liver into bite size strips
  3. Place some flour ,salt and pepper in plastic sandwich bag
  4. (big enough to hold flour and the liver pieces)
  5. Place the liver in the bag of flour and shake well to coat
  6. Once coated add to frying pan with onions
  7. Brown liver for about 5 mins on medium heat
  8. Stir tomato paste into 1/2 cup of water and add to pan
  9. Lay sprigs of rosemary on top of mixture and simmer slowly for 15 mins
  10. Stirring gently a few times to let rosemary mix well , add a little more olive oil (1 or 2 tablespoons ) and allow mixture to simmer until rich and thickened
  11. Remove roosemary and serve with creamy mashed potatoes.......
  12. Remove rosemary
