CHICKEN QUESADILLAS AND FIESTA RICE

Directions:

  1. Preheat oven to 425. Over M-H heat, cook chicken until done (5 minutes). Add soup and salsa. Heat through. Place tortillas on 2 baking sheets. Top 1/2 of each tortilla with ~ 1/2 cup of soup mixture. Spread to within 1/2 of edge. Moisten edges of tortilla with water. Fold over and seal. Bake 5 minutes, or until hot. Meanwhile, for the rice, bring the first 3 ingredients to a boil. Stir in rice; remove from heat; let sit for 5 minutes.
