Dried Apricot Pine Nut Pilaf

Ingredients:

Directions:

  1. Cook onion in olive oil over low heat.
  2. Add rice, salt, broth and water.
  3. Bring to a boil.
  4. Cover, turn the heat down to simmer for 35 minutes (until rice is tender and liquid is absorbed).
  5. Remove from heat.
  6. Add apricots, cover and let stand for 5 minutes.
  7. Stir in the pine nuts, basil and cumin.
  8. Pepper to taste and serve. (Pine nuts can be toasted in a dry frying pan over medium heat.)
