Almond Baked Halibut

Ingredients:

  • 1 tbsp salt
  • 1/2 tsp pepper
  • 3 limes , juice of
  • 2 cloves garlic, crushed
  • 1/4 cup olive oil
  • 1 tbsp butter

Directions:

  1. Heat oven to 500 degrees F.
  2. Arrange fish in a shallow baking pan.
  3. Season with salt and pepper.
  4. Blend together lime juice, garlic and oil and brush over fish.
  5. Bake for 10 minutes; turn over, baste with juice.
  6. Lower oven temperature to 425 degrees F and bake 15 minutes longer or until fish flakes easily with a fork.
  7. Baste several times during cooking.
  8. Saute almonds in butter until golden brown.
  9. Serve fish with almonds sprinkled on top and garnished with lime wedges.
