Ingredients:

  • 1 oz thai seasoning (1/2 packet)
  • 1 (14 oz) can coconut milk
  • 2 1/2 lbs chicken breasts

Directions:

  1. In a medium size bowl, make a marinade by dissolving Spicy Chicken and Rice Seasoning Mix in Coconut Milk.
  2. To bake: Place chicken in 9 x 13 baking dish. Pour all of marinade over chicken. Bake in 375F oven for 50 to 60 minutes, basting several times.
  3. TO BROIL OR GRILL: Dip chicken in marinade. Broil or grill, using medium heat. Turn often while cooking, brushing with extra marinade.
