Ingredients:

Directions:

  1. Core tomatoes
  2. Place in boiling water for about 15 - 20 seconds, then in ice water to cool quickly
  3. Peel.
  4. Cut tomatoes in wedges.
  5. In crock pot, combine all ingredients.
  6. Cover and cook on low 8 - 9 hours.
  7. Remove bay leaf.
  8. Sprinkle top with parsley, if desired.
  9. Serve as a side dish, or freeze in portions for soups or other recipes
