Canadian Bacon And Egg Breakfast Cups

Ingredients:

  • 1 6 oz package canadian bacon
  • six small eggs
  • 1/2 tsp garlic powder
  • 1 tsp pepper
  • cooking spray

Directions:

  1. Preheat oven to 400 F
  2. Spray muffin pan with cooking spray
  3. Arrange 2 pieces of Canadian bacon in each muffin cup, overlapping them
  4. (Canadian bacon molds more easily if it is warm)
  5. Place a pinch of shredded cheese into bottom of each cup
  6. Crack eggs one at a time into custard dish or measuring cup, and slide into each muffin cup
  7. Sprinkle with garlic powder and pepper
  8. Bake 12-14 minutes depending on how well done you prefer your eggs
  9. (For children eggs should be fully cooked to avoid salmonella risk)
