Banana-Bran Muffins

Ingredients:

  • 1 cup wheat bran
  • 1/4 tsp salt
  • 1 egg
  • blueberries (can be added-in as well, possibly a few tbsp sugar or honey if bananas are not sweet enough-the ripe) or raisins (can be added-in as well, possibly a few tbsp sugar or honey if bananas are not sweet enough-the ripe) or chopped pineapple

Directions:

  1. Mix dry ingredients.
  2. Mash bananas and add enough milk to make 1.5 cups total.
  3. Add egg to bananas.
  4. Pour wet over dry ingredients and stir just until mixed.
  5. Spoon into 12 lightly greased/pammed muffin cups.
  6. Bake at 400 degrees for 15-18 minutes. Remove from cups while still hot.
  7. Makes 12 small or 6 jumbo muffins.
