Ingredients:

  • 1 medium onion
  • 600 g zucchini
  • 1 cup water
  • 1 salt and pepper to taste

Directions:

  1. Slice onion and zucchini and place in large soup pot.
  2. Add chicken stock (one large can), water, and salt/pepper.
  3. Bring to a boil, cover, and simmer for 15-20 minutes.
  4. Add cream cheese and puree.
  5. Top with paprika and a dollop of sour cream.
