600 g zucchini |
796 ml chicken stock |
1 cup water |
125 g light cream cheese |
1 salt and pepper to taste |
Directions:
1. slice onion and zucchini and place in large soup pot. 2. add chicken stock (one large can), water, and salt/pepper. 3. bring to a boil, cover, and simmer for 15-20 minutes. 4. add cream cheese and puree. 5. top with paprika and a dollop of sour cream. |
