  1. Cook 2 slices applewood-smoked bacon in a large skillet over medium heat until crisp. Remove bacon from pan; crumble. Add 1 tablespoon butter to drippings in pan; swirl to coat. Add 6 ounces quartered fresh morel mushrooms; sauté 4 minutes, stirring occasionally. Stir in 1 pound (1-inch) asparagus pieces, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper; sauté 5 minutes or until asparagus is crisp-tender, stirring occasionally. Remove from heat; sprinkle with bacon and 3 tablespoons chopped ramp greens or fresh chives.
