Roasted Chicken Al-Kabsa (Saudi) (Gluten Free)

Ingredients:

  • 3 tbsp olive oil
  • 1/8 tsp turmeric
  • 1/2 tsp baharat ( aka middle east mixed spices - the real mix)
  • 1/2 tsp kabsa spice mix (saudi kabsa spice mix)

Directions:

  1. Preheat oven to 350°F.
  2. De-skin the chicken.
  3. Season with spices and olive oil.
  4. Place in a roasting pan and into the oven for 40-50 minutes.
  5. Garnish with cilantro and serve with Saudi Carrot Basmati Rice (Zainab's Mom's) or basmati rice.
  6. Enjoy!
