Directions:

  1. Heat grill or broiler.
  2. In a bowl, whisk together olive oil, garlic, mint, 1 Tbsp lemon zest and 2 tsp lemon juice.
  3. Brush zucchini with oil mixture.
  4. Grill or broil 3 minutes turning once.
  5. Season grilled zucchini with salt and pepper.
