  1. Preheat oven to 450 . rub the olive oil and 3 cloves of garlic over chicken . cut the lemon in half ,and place in the cavity of the chicken , along with the remaining cloves of garlic and rosemary . sprinkle salt and pepper over the chicken . Place chicken in black iron skillet. Roast for 30 mins , then turn oven down to 350 and bake for an additional hour .
  2. Brine recipe : Place 1 c salt and 5 qts of water in a large container and stir to dissolve the salt . submerge chicken in brine making sure it is completely covered with brine ,cover and refrigerate for 3 to 8 hrs remove chicken from brine rinse well and pat dry .
