Ingredients:

  • 5 cups (1/2-inch- thick) slices peeled sweet potato (about 2 lb)
  • cooking spray
  • 1/2 tsp salt, divided
  • 1/4 cup maple syrup

Directions:

  1. Preheat oven to 350°.
  2. Arrange half of potato slices in an 11 x 7-inch baking dish coated with cooking spray; sprinkle with half of the salt. Arrange remaining potato slices on top; sprinkle with remaining salt. Pour syrup over potatoes. Cover and bake at 350° for 1 hour or until tender.
