Autumn Maple Sweet Potatoes

Ingredients:

  • 3 to 4 medium sweet potatoes , about 2 lb
  • 1/4 tsp salt
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • cinnamon , to taste
  • 3 to 4 tbsp half-and-half or milk

Directions:

  1. Cook sweet potatoes in boiling water until tender.
  2. Allow to cool slightly and then peel.
  3. Mash with salt, butter, and maple syrup.
  4. Add cinnamon to taste then continue to mash with the milk or half-and-half to desired consistency.
  5. Sprinkle with nutmeg prior to serving.
