London Broil with Texas Toast and Red Onion Jam

  1. To prepare steak, place first 4 ingredients in a large zip-top plastic bag; add steak. Seal and marinate in refrigerator 2 hours, turning occasionally.
  2. Preheat broiler.
  3. Remove steak from bag; discard marinade. Sprinkle steak with 1/2 teaspoon salt and 1/2 teaspoon pepper. Place steak on a broiler pan coated with cooking spray. Broil 10 minutes on each side (medium-rare) or until desired degree of doneness. Place steak on a cutting board; cover loosely with foil. Let stand 10 minutes. Cut steak against grain into thin slices.
  4. To prepare jam, heat oil in a Dutch oven over medium-high heat. Add onion; cook 20 to 25 minutes or until deep golden brown, stirring frequently. Add 1/4 cup vinegar, 2 tablespoons sugar, ginger, and 6 minced garlic cloves; cook 2 minutes or until liquid almost evaporates. Stir in basil, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  5. Preheat oven to 350°.
  6. To prepare toast, place bread slices on a large baking sheet. Bake at 350° for 8 minutes or until lightly browned. Combine butter and 1 crushed garlic clove; brush over toast. Serve steak with toast and jam.
