Diabetic Cornbread Muffins

Ingredients:

  • 1 1/2 cups cornmeal
  • 2 tbsp sugar
  • 1/4 tsp baking soda
  • 1 1/4 cups skim milk
  • 2 tbsp cooking oil
  • 1/2 cup flour
  • 1/2 tsp salt

Directions:

  1. Combine dry ingredients.
  2. Mix milk,applesauce,egg whites and cooking oil.
  3. Stir into dry ingredients until just moistened.
  4. Fill greased muffin cups 2/3 full.
  5. Bake at 400F 18-20 minutes.
