Diabetic Cornbread Muffins |

Good for a diabetic recipe. Ingredients:
1 1/2 cups cornmeal |
2 tablespoons sugar |
1/4 teaspoon baking soda |
1 1/4 cups skim milk |
1/4 cup unsweetened applesauce |
2 egg whites |
2 tablespoons cooking oil |
1/2 cup flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
Directions:
1. Combine dry ingredients. 2. Mix milk,applesauce,egg whites and cooking oil. 3. Stir into dry ingredients until just moistened. 4. Fill greased muffin cups 2/3 full. 5. Bake at 400F 18-20 minutes. |
