Ingredients:

  • 2 medium carrots, sliced , 1 cup
  • 4 medium small zucchini cut into julienne strips, about 3 cups
  • 1 tbsp e.v.o,o
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Steam carrots 3 minutes, add zucchini and steam 4 to 6 minutes more or until carrots and zucchini are crisp tender.
  2. Heat oil in a large skillet, add all ingredients and cook uncovered for
  3. 2 to 3 minutes or until heated through
  4. 4 servings
