A very colorful side that goes well with poultry or pork, especially grilled. Ingredients:
2 medium carrots, sliced, 1 cup |
4 medium small zucchini cut into julienne strips, about 3 cups |
1 tbl e.v.o,o |
1 tbl fresh or 1 tsp dried sage |
1 tsp fresh or 1/4 tsp dried dill |
2 tsp lemon juice |
1/4 tsp salt |
1/4 tsp pepper |
Directions:
1. Steam carrots 3 minutes, add zucchini and steam 4 to 6 minutes more or until carrots and zucchini are crisp tender. 2. Heat oil in a large skillet, add all ingredients and cook uncovered for 3. 2 to 3 minutes or until heated through 4. 4 servings |
