Ingredients:

  • 1 3/4 cups flour
  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 2 -3 eggs (or substitute, e.g., 2 tbsp potato starch per egg)
  • 1/3 cup buttermilk

Directions:

  1. Soy-buttermilk can be made by mixing 1 cup soymilk with 1 tbsp vinegar (1:1 subtitution with real buttermilk).
  2. Mix dry ingredients.
  3. Mix bananas/oil/buttermilk in a separate bowl (blend 'til smooth).
  4. Stir dry and wet ingredients.
  5. Add 'eggs' and mix well.
  6. Bake at 325ºF for 1 hr 15 minute.
