Ingredients:

  1. Cover beans with water. Bring slowly to boil or soak overnight. Drain. Cover with fresh water and simmer slowly. When skins of the beans start to burst, the beans are sufficiently cooked. Drain.
  2. Add onion, salt pork strips, sugar, ketchup, mustard, salt, worcestershire sauce and boiling water. Place in greased casserole and top with salt pork strips. Bake covered 300 oven for 6-8 hours. Uncover for last hour of cooking.
  3. Add additional water, or stock, if beans become dry.
  4. Alternatives: The beans and remaining ingredients may be simmered on the range top for 45 minutes, then baked for 2 hours. You may also omit the salt pork.
