Warm New Potato And Green Bean Salad

Ingredients:

Directions:

  1. Dressing:
  2. Combine oil, lemon juice, garlic, spices in small jar with a tight lid.
  3. Shake and set aside.
  4. Salad:
  5. Scrub and cut potatoes in halves (bite-size pieces) depending on size.
  6. In a 6 cup microwaveable casserole, combine potatoes, garlic and 1/4 cup of water. Cover and micowave at HIGH 8-10 minutes.
  7. Stir or shake dish once while cooking.
  8. Drain, discard garlic and transfer to a large bowl.
  9. Pour dressing over hot potatoes.
  10. Sprinkle on rosemary.
  11. Cover and let stand.
  12. Place green beans in small microwaveable dish with 1/4 cup of water. Cover and microwave about 4-6 minutes.
  13. Drain and rinse under cold water. Drain well.
  14. Add to potatoes along with olives and crumble the feta cheese over all. Toss. Taste and adjust seasoning with salt and pepper.
