Ingredients:

  • 2 medium zucchini
  • 2 (6 1/2 oz) cans tuna
  • 2 eggs
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Shred zucchini; blot dry with paper towel.
  2. Mix in remainig ingredients.
  3. Shape into 3 to 4 round patties.
  4. Heat 1 to 2 teaspoons olive oil in large frying pan.
  5. Cook patties 8 to 10 minutes on each side until golden brown.
