Ingredients:

  • 2 lbs tomatoes
  • 1/2 cup olive oil
  • 2 tbsp garlic
  • 1 tsp sea salt
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 8 oz pasta

Directions:

  1. Line large cookie sheet with aluminum foil and spray with pam. Cut tomatoes in half and place in bowl. Mix tomatoes with 1/4 cup olive oil and then place cut side up on cookie sheet. Mince garlic.Put minced garlic over tomatoes. Mix all spices and spoon over cut tomatoes. If not enough mix a little more. Drizzle 2 tablespoons of olive oil over tomatoes. Bake 400 degrees for 45-60 minutes. When done place 1/2 of tomatoes in a bowl with last 2 tablespoons of olive oil and coarsly mash. Cook pasta and drain. Add mashed tomatoes to pasta and mix then add rest of unmashed tomatoes.
