This recipe prepares the tomato in a way that the flavor is intensified for adding to your pasta. Spiced and baked then added to the cooked pasta for a terrific dish. Plus a way to use your extra tomatoes at this time os the year Ingredients:
2 lbs tomatoes |
1/2 cup olive oil |
2 tablespoons garlic |
1 teaspoon sea salt |
1/4 teaspoon dried oregano |
1/4 teaspoon dried basil |
1/4 teaspoon garlic powder |
1/4 teaspoon pepper |
8 ounces pasta |
Directions:
1. Line large cookie sheet with aluminum foil and spray with pam. Cut tomatoes in half and place in bowl. Mix tomatoes with 1/4 cup olive oil and then place cut side up on cookie sheet. Mince garlic.Put minced garlic over tomatoes. Mix all spices and spoon over cut tomatoes. If not enough mix a little more. Drizzle 2 tablespoons of olive oil over tomatoes. Bake 400 degrees for 45-60 minutes. When done place 1/2 of tomatoes in a bowl with last 2 tablespoons of olive oil and coarsly mash. Cook pasta and drain. Add mashed tomatoes to pasta and mix then add rest of unmashed tomatoes. |
