Ingredients:

Directions:

  1. Cut zucchini lengthwise into 1/4 planks,then cut across the planks to make batons
  2. Heat olive oil and butter in medium skillet over med-high heat
  3. Add the almonds and saute till zucchini are just tender,about 1 min
  4. Transfer zucchini and almonds to a platter Use a vegetable peeler to shave parmesan over top ,if desired
