Ingredients:

Directions:

  1. Cook edamame according to package directions. Cool.
  2. Mix together olive oil, lemon juice, garlic, and pimientos. Pour over edamame and toss to coat.
  3. Season to taste with salt and pepper.
  4. Chill 30 mnutes before serving; may also be served at room temperature.
