Fresh, chilled Edamame seasoned just right with heart-healthy olive oil and seasonings Ingredients:
2/3 cup edamame, shelled |
2 teaspoons extra virgin olive oil |
2 tablespoons lemon juice |
1/2 teaspoon garlic, grated |
2 teaspoons pimientos, minced |
1 dash salt |
1 dash pepper, fresh ground |
Directions:
1. Cook edamame according to package directions. Cool. 2. Mix together olive oil, lemon juice, garlic, and pimientos. Pour over edamame and toss to coat. 3. Season to taste with salt and pepper. 4. Chill 30 mnutes before serving; may also be served at room temperature. |
