Quickie, No Mess Omelette

Ingredients:

  • 2 large eggs
  • 2 tbsp milk
  • 1/4 cup green pepper
  • 1/4 cup red pepper
  • 2 tbsp onions
  • 1/4 cup ham
  • 2 medium mushrooms
  • 1/4 tsp pepper
  • 1 tbsp butter

Directions:

  1. Put all into blender (except butter) and blend until veggies are well minced.
  2. Melt butter in a medium fry pan over medium heat until butter starts to bubble.
  3. Lift and tilt pan to distribute butter all over pan.
  4. Pour egg mixture into fry pan and cover.
  5. Cook until top is set.
  6. (you might have to lift omelette and tilt pan to let stubborn eggs slide under and cook).
  7. Gently fold omelette in half and slide onto plate.
  8. Enjoy with a piece of toast.
