Ingredients:

  • 2 envelopes unflavored gelatin
  • 2 tbsp sugar
  • 1 3/4 cups boiling water
  • 1 1/3 cups mayonnaise
  • 1/4 cup lemon juice
  • 1/4 cup finely chopped onion

Directions:

  1. Mix gelatin and sugar together in a large bowl.
  2. Stir constantly as you add boiling water, and continue to stir until gelatin dissolves completely.
  3. Blend in the mayonnaise and lemon juice.
  4. Put in refrigerator to chill until the consistency of the mixture is about the same as the consistency of unbeaten egg whites.
  5. Stir in the vegetables and pour into a 11x7 pan and put back in the refrigerator to chill until it is firm.
  6. Cut into 6-8 squares to serve.
