Mushroom Pecan Stuffing

Ingredients:

  • 1 lb pecan pieces
  • 3 tab. olive oil
  • 3 tab. butter
  • 1 bunch leeks, chopped (approx 2 cups)
  • 1 (10oz.) box currants
  • 1 (16oz) bag herb stuffing mix
  • (and whatever the stuffing mix calls for)

Directions:

  1. Heat oven to 350*.
  2. Spread pecan pieces on pan and bake 6-8 minutes, till toasted and fragrant
  3. In large skillet over medium high heat, heat oil and butter until hot. Add onions and cook, stirring occasionally. 5 minutes or till translucent
  4. Add mushrooms and cook, stirring occasionally, 6-8 minutes or until lightly browned.
  5. Add leeks and cook, stirring occasionally, 3-5 minutes until limp
  6. In large bowl stir pecans, muchroom mixture, currants and stuffing mix. Add butter and liquid to mixture according to package directions on the stuffing mix
  7. Ready to serve, stuff in bird or transfer to casserole and heat in oven until hot and crisped on top
