Mini Baked Potatoes With Blue Cheese

Ingredients:

Directions:

  1. Preheat oven to 350
  2. Wash and dry potatoes
  3. Toss with oil in large bowl, until coated
  4. Lightly roll potatoes in coarse salt, and place on baking sheet
  5. Bake 45-50 minutes, until tender
  6. Combine sour cream and blue cheese in small bowl
  7. Cut a cross in the top of each potato, and press gently with fingertips to open
  8. Top with generous spoonful of cheese mixture
  9. Garnish with chives
