Mini Baked Potatoes With Blue Cheese |

Miniature potatoes that can be eaten with fingers. Great start to any party! Makes 20 potatoes. From cookbook by Brigitte Jones, Appetizers, Finger Food, Buffets and Parties. Possibilities for alterations are endless: bacon, cheddar, etc. Ingredients:
20 new, salad, or other miniature potatoes |
4 t veg. oil |
coarse salt |
1/2 c sour cream |
1/4 c crumbled blue cheese |
2 t chopped fresh chives |
Directions:
1. Preheat oven to 350 2. Wash and dry potatoes 3. Toss with oil in large bowl, until coated 4. Lightly roll potatoes in coarse salt, and place on baking sheet 5. Bake 45-50 minutes, until tender 6. Combine sour cream and blue cheese in small bowl 7. Cut a cross in the top of each potato, and press gently with fingertips to open 8. Top with generous spoonful of cheese mixture 9. Garnish with chives |
