Lentil Couscous With Spinach

Ingredients:

  • 3 clove garlic minced
  • 1/2 cup dried lentils
  • 1 tbsp olive oil
  • 10 cup bagged prewashed spinach (about 5 oz)
  • 1 1/4 tsp salt
  • cooking spray

Directions:

  1. Coat mediu saucepan with cooking spray, heat over medium heat. Add onion to pan; cook 5 minutes or until golden, stirring occassionally. Stir in garlic; cook 30 seconds, stirring constantly. Add 1 cup water and lentile, and bring to a boil. Cover, reduce heat, and simmer 30 minutes or until lentils are tender.
  2. While lentils cook, bring 1 cup water to a boil in a large saucepan. Gradually stir in couscous and oil. Remove from heat. Add spinach, and cover and let stand 5 minutes. Combine lentil mixture, couscous mixture, salt, cumin, and pepper in a lrge bowl.
