Ingredients:
1 cup(s) onion chopped |
3 clove(s) garlic minced |
2 cup(s) water divided |
1/2 cup(s) dried lentils |
1/2 cup(s) uncooked couscous |
1 tablespoon(s) olive oil |
10 cup(s) bagged prewashed spinach (about 5 ounces) |
1 1/4 teaspoon(s) salt |
1 teaspoon(s) ground cumin |
1/4 teaspoon(s) freshly ground black pepper |

Directions:
1. Coat mediu saucepan with cooking spray, heat over medium heat. Add onion to pan; cook 5 minutes or until golden, stirring occassionally. Stir in garlic; cook 30 seconds, stirring constantly. Add 1 cup water and lentile, and bring to a boil. Cover, reduce heat, and simmer 30 minutes or until lentils are tender. 2. While lentils cook, bring 1 cup water to a boil in a large saucepan. Gradually stir in couscous and oil. Remove from heat. Add spinach, and cover and let stand 5 minutes. Combine lentil mixture, couscous mixture, salt, cumin, and pepper in a lrge bowl. 3.
