Ingredients:

Directions:

  1. In a 10 inch Skillet over Medium High Heat w/ 1 tablespoon of olive oil brown the chicken. Drain and remove from pan.
  2. In the same skillet w/ the remaining 1 olive oil cook mushrooms, onion and garlic until they are tender.
  3. In a small bowl mix together tomato soup, basil and pepper until smooth.
  4. Add cornstarch mixture to skillet w/ vegetable mixture.
  5. Cook until mixture boils and sauce thickens, stirring constantly.
  6. Return chicken to skillet. Reduce heat, cover and cook 5 minutes or until chicken is no longer pink. Stir in parsley and serve over angel hair pasta or rice.
