Quick and Easy. Got this from an old Campbell's Book by the same name. truly quick and easy and best of all Delicious. serve over rice for best calorie count. Ingredients:
2 tbsp olive oil |
1 pound skinless chicken breast, diced 1 cubes |
2 cups mushrooms, sliced |
1 cup diced onion, fresh |
2 cloves garlic, minced |
4 tsp cornstarch |
2 cups tomato soup |
1/4 tsp basil |
1/8 tsp pepper |
2 tsp parsley |
Directions:
1. In a 10 inch Skillet over Medium High Heat w/ 1 tablespoon of olive oil brown the chicken. Drain and remove from pan. 2. In the same skillet w/ the remaining 1 olive oil cook mushrooms, onion and garlic until they are tender. 3. In a small bowl mix together tomato soup, basil and pepper until smooth. 4. Add cornstarch mixture to skillet w/ vegetable mixture. 5. Cook until mixture boils and sauce thickens, stirring constantly. 6. Return chicken to skillet. Reduce heat, cover and cook 5 minutes or until chicken is no longer pink. Stir in parsley and serve over angel hair pasta or rice. |
