Italian Gigi Sauce With Chicken and Pasta

Ingredients:

Directions:

  1. Fill a large stove-top pot with water, cover and bring to a boil.
  2. Heat oil in a large nonstick fry pan or wok at med-high.
  3. Cut chicken into bite-size pieces and add to pan as you cut.
  4. Add garlic and basil to pan. Toss occasionally until meat is no longer pink.
  5. While meat is browning….
  6. Slice onion and add to pan as you chop.
  7. Wash and slice mushrooms, adding to pan as you slice.
  8. Place pasta in boiling water, stir and cook uncovered.
  9. Set timer according to package directions (approx 11 minutes).
  10. Add tomato soup to chicken mixture and stir.
  11. Gradually add milk, then salsa.
  12. Stir well to combine.
  13. Wash and chop the green onion. Set aside.
  14. Rinse the cooked pasta under hot water in a colander. Let drain. Return pasta to pot.
  15. Toss with olive oil and basil.
  16. Serve sauce over pasta and sprinkle green onion for garnish.
  17. Our family also loves a little parmesan cheese on top.
