Irish Mashed Potatoes

Ingredients:

  • 3 lbs potatoes
  • 6 cloves minced garlic
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • cooking spray

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine first 4 ingredients in a stockpot and cover with water.
  3. Bring to a boil, cover, reduce heat, and simmer 30 minutes.
  4. Drain and return potato mixture to pot.
  5. Add cream cheese, milk, sour cream, salt, and pepper.
  6. Mash.
  7. Spray a casserole dish with cooking spray.
  8. Spoon mixture into casserole.
  9. Cover and bake 45 minutes
