Ingredients:

Directions:

  1. Preheat the oven to 375°F Place the chicken in a shallow roasting pan and set aside.
  2. Heat the oil in a small pan and fry the scallions and garlic for 2 mins or until softened.
  3. Add the honey, orange juice, orange segments and soy sauce to the pan, stirring well until the honey has melted.
  4. Pour over the chicken and bake, uncovered for about 45 mins, basting with the honey glaze once or twice, until the chicken is cooked.
  5. Serve the chicken in its sauce with your choice of accompaniments.
