Grilled Red Onion and Zucchini

Ingredients:

  • 2 tsp olive oil
  • 1 large red onion , cut into 4 (1/2-inch thick) slices
  • 2 large zucchini , halved lengthwise
  • cooking spray

Directions:

  1. Prepare grill.
  2. Combine first 3 ingredients in a large bowl. Add onion and zucchini, and toss to coat.
  3. Place vegetables on grill rack coated with cooking spray; cover and grill 10 to 12 minutes or until vegetables are tender.
