Grilled Ginger Pork with Grilled Tomatoes

  1. Combine the marinade ingredients in a bowl. Reserve 1/3 of the marinade and place in another small bowl; cover and place in therefrigerator. Add the pork to the remaining 2/3 of the marinade. Cover the bowl and place the pork mixture in the refrigerator to marinate overnight.
  2. Remove the pork from the marinade, discard the marinade, and allow the pork to come to room temperature, about 15 minutes. Heat a grill to medium-high and coat the rack with cooking spray. Add the pork to the grill and close the cover. Grill with the cover closed for about 10 minutes. Open the grill cover and turn the pork. Close the cover again and grill another 8 to 10 minutes. Remove the pork from the grill and allow to rest on a carving board for about 5 minutes.
  3. Meanwhile, add the tomato halves to the reserved 1/3 of the marinade. Place the tomatoes on the grill, cut side down, discard any remaing marinade, and grill tomatoes for about 6 minutes, until they have grill marks and are tender. Remove the tomatoes with long-handled tongs. Slice the pork and serve with the tomatoes.
