Elaines Quick-rising Whole Wheat Loaves

Ingredients:

  • 1 package baking yeast
  • 1 1/2 cups warm water
  • 1 1/2 tsp sugar
  • 1 tsp salt
  • 1/4 cup olive oil

Directions:

  1. Add the sugar and yeast to the warm water
  2. Set to work in a warm place about 10 minutes
  3. The dough
  4. To a large mixing bowl, place the flour, and the salt
  5. After the yeast begins to bubble, add it directly to the bowl of flour and salt
  6. Add two whole eggs
  7. Add the olive oil
  8. Mix in thoroughly with a fork, adding additional white flour as needed, combining until the dough starts to pull away from the sides of the bowl
  9. Knead the dough right in the bowl, adding additional flour lightly, until the dough is not sticking to your hands
  10. This dough does not have to be kneaded to the smooth and blistered stage.
  11. Form the dough into a round ball, and coat lightly with olive oil to prevent drying out.
  12. Place in a warm place to proof, until doubled in bulk.
  13. When doubled, punch down, then form the loaves or rolls of your choice.
  14. Allow to proof again until doubled. (This does not take very long!)
  15. Bake at 375*F for 30 minutes.
  16. Lower heat to 30 for the last 10 minutes, or until loaves are golden brown and sound hollow when tapped
