Easy Corn Patties or Fritters

Ingredients:

  • 1 (6 1/2 oz) envelope cornbread mix
  • 1 1/2 cups corn
  • 1 large egg
  • 1/2 cup milk
  • salt and pepper
  • spices (and everything nice , as needed )

Directions:

  1. Combine all ingredients. easy right?.
  2. Let stand 5 minutes.
  3. Heat vegetable oil in pan.
  4. Drop heaping tablespoons of batter into hot oil.
  5. Cook for 1 - 1 1/2 minutes on each side or until nicely browned.
  6. Flatten with spatula after turning.
  7. Eat! serve warm or at room temp with honey, maple syrup, sour cream, salsa, anything!
