Ingredients:

Directions:

  1. Combine the lentils and 1/2 cup of water in a 2-quart microwave safe casserole. Cover and cook at full power for 5 minutes.
  2. Stir in the carrots and another 1/2 cup of water, recover and microwave another 5 minutes.
  3. Stir in remaining ingredients and final 1/2 cup of water, recover and microwave a final 5 minutes.
  4. Serve immediately.
  5. Cooking times may have to be adjusted if your microwave is much less than a 700 watt appliance.
