Curried Carrots And Lentils |

Fabulous accompaniment to a fish or meat curry, throws together so quickly and tastes great! Ingredients:
1/2 cup dried lentils |
1 1/2 cups water, 1/2 cup at a time |
3 carrots, peeled and cut into 2-inch pieces |
1/2 onion, chopped (i use a sweet yellow onion) |
1/4 cup golden or sultana raisins |
2 tablespoons olive oil (unsalted butter would be fine as well) |
1 teaspoon salt |
3/4 teaspoon (or more) high quality curry powder |
1/2 teaspoon fennel seeds |
fresh ground black pepper to taste |
Directions:
1. Combine the lentils and 1/2 cup of water in a 2-quart microwave safe casserole. Cover and cook at full power for 5 minutes. 2. Stir in the carrots and another 1/2 cup of water, recover and microwave another 5 minutes. 3. Stir in remaining ingredients and final 1/2 cup of water, recover and microwave a final 5 minutes. 4. Serve immediately. 5. Cooking times may have to be adjusted if your microwave is much less than a 700 watt appliance. |
