Ingredients:

  • 2 1/2 cups flour
  • pinch of salt
  • 2 sticks butter
  • 2 tbsp cold water
  • or 1 lb already made unsweetened pastry
  • filling
  • 1 tbsp olive oil
  • 1 large onion diced
  • splash of dry red wine ( i had pinot gris)
  • 4 eggs
  • 1/2 cup milk or cream
  • 250 g crabmeat ( i used canned )
  • pinch of nutmeg
  • pinch of paprika
  • salt and pepper to taste

Directions:

  1. If you are making the pastry yourself, mix the flour and salt together. Add the butter cut in small cubes and rub it in the mixture to resemble fine bread crumbs. Gradually stir in the butter to create a firm dough. Roll and cut with a glass round shapes. Put them at the bottom of muffin forms.
  2. Preheat oven at 375F.
  3. Heat oil in the pan and add the onion with a little salt. Cook 5 min until softened ( not brown) and add the garlic. Cook another minute. Add splash of wine and cook 1 more minute. Let cool.
  4. Whisk the eggs. Add gradually the milk. Add the crabmeat, grated cheese, onion mixture and the rest of the ingredients while you keep on whisking. Fill the pastry with about 2 fullspoons of the egg/crab mixture.
  5. Bake 30 - 35 min and serve hot or cold.
