Ingredients:

  • chicken-this can be left over rotiseree chicken, grilled chicken, or even the chicken that is canned.
  • can of black beans
  • 1 jicama (optional)
  • .5 red onion (optional)
  • fresh cilantro (optional-this will give the salad a spicy kick)
  • 1 ranch packet (make the with non-fat mayo

Directions:

  1. Make the ranch dressing! You can sub mayo for Non-fat yogurt!
  2. Chop the lettuce
  3. Add the chicken
  4. Drain corn and beans add to salad
  5. Chop Cucmber into fours and dice
  6. Slice acocado
  7. Chop jicama
  8. Add in ranch & BBQ! (not too heavy)
  9. Sprinke with cilantro
